We had a lot of tomatoes and eggplant from the garden that needed to be used up so I decided to try making some baingan bharta. Also in it from the garden were some garlic and a jalapeño. Alas, the onion and cilantro came from the store, although we had both in the garden earlier this summer. The recipe I used is here. It turned out pretty well, although I probably will use a little less garam masala next time.
It is accompanied by a fruity kale salad that I threw together after getting ideas from several online recipes. I chopped up kale fairly fine and added walnuts, dried cranberries, canned mandarin orange slices and crumbled goat cheese. Then I mixed it with a dressing consisting of:
1/3 cup olive oil
1/3 cup apple cider vinegar
1 Tbs. honey
1 Tbs. lemon juice
1 tsp. Dijon mustard
I have to say it turn out delicious – very sweet
